Here, he steps outside his norm, working with Folle Blanche, Chardonnay, and Pinot Noir grapes. It's hard not to compare this to the big C (Champagne), but it's so much more than an imitation. Alongside the toasty, chalky energy there's a lemon y, savory quality that feels (spoiler alert!) distinctly like Muscadet here. Beyond beautiful alongside a plate of oysters.
